Beefy Broccoli and Cheese Burritos

Everyone enjoys a good burrito, but not so much the unhealthiness of one. Taken from the backside of a Knorr Broccoli and Cheddar rice dish package; with these burritos not only do you get quality taste, but also a hearty and healthy meal. These burritos have become a  fan favourite in our household. We hope that you will come to enjoy these as well.

Beefy Broccoli and Cheddar Burritos

Yields 4 servings

Ingredients

  • 1 lb ground beef
  • Knorr Broccoli and Cheddar rice package
  • 2 cups water
  • 1 can (15 oz.) red kidney beans, rinsed and drained
  • 8 (10 in.) burrito sized flour tortillas
  • 1 jar (16 oz.) salsa, divided; of our preferred hotness
  • 1 cup shredded cheddar cheese
  • 2 chopped green onions (optional)
Instructions

  1.  Preheat oven to 350℉. Cook beef in a large skillet until done, about 5 min. Remove beef and put aside.
  2. Stir Knorr package, water, and beans into same skillet; bring to boil. Reduce heat to medium and cook covered for 7 min. or until rice is tender. Stir in beef. Remove from heat and stir in 1/2 cup of salsa and 1/2 cup of cheese.
  3. Grease 13x9 inch baking dish. Spoon in 1/2 cup of salsa and coat bottom of dish. Spoon 3/4 cup of rice mix into each burrito and roll up. Arrange burritos, seam side down in baking dish. Spread remaining salsa down the center of the burritos. Sprinkle with remaining 1/2 cup of cheese. Cover with aluminum foil and bake 25 min. Garnish with green onions.
